Skinny Reuben Sandwich


I was doing some research on the "traditional" New Year's Day meal, and came across a bunch of different traditions. Culture and the symbols of the food have a lot to do with a persons choice of their new years meal. In the south it is tradition to eat black eyed peas, cornbread, pork, and collards. In the Midwest it is corned beef and cabbage. In other parts of the world people eat donuts. So why these foods in particular? These foods are said to deliver good luck in the new year; greens are eaten to resemble money and good fortune, grains for long life and abundance and donuts for the symbol of coming full circle. I'm not sure what I believe, but I do like the idea of having a food tradition on New Years. I decided with a more appealing version of corned beef and cabbage, a Reuben! I believe you make your own luck, but there is no problem in some lucky food! Happy New Years everyone :)

Ingredients:
8 slices dark rye bread
4 Tbsp. light thousand island dressing
8 oz sliced corned beef
4 slices reduced fat Swiss cheese
1 cup sauerkraut, rinsed and drained

Directions:
1. Preheat oven to 350
2. On 4 slices of bread spread 1 Tbsp dressing onto bread
3. Top each slice with 2 oz. meat, 1 slice of cheese, 1/4 cup sauerkraut and top with other piece of bread
4. Bake in oven until cheese starts to melt
