Apple Cinnamon and Pistachio Oats


This warm breakfast has texture, fiber, protein, sweetness, spice and everything nice! I am so glad fall is here and this is the perfect breakfast to get you in the mood for those boots and sweaters.

Ingredients:
1/2 cup rolled oats
1 medium apple, diced
1/4 cup non-fat greek yogurt
2 Tbsp pistachios
2 Tbsp raisins
1/2 Tbsp honey
Cinnamon powder

Directions:
1. In a medium bowl add oats, 1 cup water, a dash of cinnamon, half the diced apples, and half the raisins
2. Microwave on high for 1 minute and 30 seconds and stir
3. Top oatmeal with greek yogurt and sprinkle on remaining apple and raisins
4. Drizzle with honey
