Whole Wheat Banana Nut Pancakes


I wanted to make something yummy and cute for our anniversary breakfast and was very pleased with how they turned out! Walnuts are so good for you, just a handful a day has been proven to lower your chance of cardiovascular disease, aid in weight management, and help fight certain types of cancer. Enjoy:)
Ingredients:
2 cups whole wheat pastry flour
4 ½ tsp baking powder
½ tsp salt
2 tsp cinnamon
2 eggs
2 cups plus 2 Tbsp low fat milk
2 tsp vanilla
1 ripe banana-mashed
2 tbsp chopped walnuts
Directions:
1. Heat a large skillet over medium heat and spray with cooking spray
2. Combine dry ingredients into large mixing bowl and stir
3. In a medium sized mixing bowl, mix together eggs and rest of ingredients
4. Combine ingredients and stir well
5. Place a ¼ cup mixture into pan and flip once bubbles appear, repeat with remaining batter
*Using a large cookie cutter, cut pancakes into whatever shape you like!
