I was so excited about this recipe, eggnog combined with a sugar cookie, what could be better? I made a healthy version of eggnog that you can have every day and not feel guilty. As you probably know eggnog is not the healthiest holiday treat, but I tweaked the recipe to make it a new healthy addition to your holiday cookie platter! Enjoy:)
Ingredients:
1/4 cup butter
¼ cup + 2 tbsp baking stevia (you can also use ¾ cup regular sugar)
1 egg
1 tsp vanilla extract
1 cup all purpose flour
¼ tsp baking powder
1/8 tsp salt
¼ eggnog
Nutmeg to sprinkle on top
Directions:
1. Cream together butter and sugar with hand mixer until fluffy
2. Mix in egg, vanilla extract, and eggnog
3. In a separate small bowl combine flour, baking powder, and salt
4. Slowly add in flour mixture and mix until combined
5. Place dough in the fridge for 30 minutes to chill
6. Once dough has chilled and is ready to roll preheat oven to 375 and line a baking sheet with parchment paper or spray with cooking spray
7. Roll out dough onto lightly floured surface and cut with cookie cutters, place on baking sheet and sprinkle with nutmeg, bake for 8 minutes
Healthy Eggnog:
½ cup egg beaters
1 cup almond milk
¼ tsp pumpkin pie spice
¼ tsp cinnamon
½ tsp imitation rum extract
1 packet stevia
*Combine all ingredients in a small mixing bowl and place into a container to chill for 30 minutes, use in baking, as coffee creamer, or enjoy just like a regular cup of eggnog
