Greek Turkey Patties

These were created for the times I crave a Gyro, but don’t want the unknown meat and high fat that goes along with it. I love these patties because you can make them in advance and put them into a pita pocket or over a salad. They are also a great way to sneak some veggies in! Enjoy:)
Ingredients:
1 lb. lean ground turkey
½ cup zucchini grated
1 diced garlic clove
1/8 cup red onion, diced
1 tbsp chopped fresh oregano
2 tbsp chopped fresh parsley
1 tbsp chopped fresh mint
Salt and pepper to taste
Directions:
1. Preheat skillet over medium-high heat and coat with cooking spray
2. Combine all ingredients in a large bowl and mix well
3. Form into 4 ½ cup patties
4. Place in skillet and cook through turning 2-3 times (about 15 min)
