Finally the weather here in Az is starting to cool down. Chili is so great for us because I always make a ton of it and can have it throughout the week. This chili is full of flavor and different textures. This is also made on the stove and is done in less than 40 minutes! Enjoy:)
Ingredients:
8oz lean ground turkey
1 medium sweet onion, chopped
1 red bell pepper, sliced
4 garlic cloves
1 tbsp chili powder
1 tbsp cumin
½ tsp ground cinnamon
1 can black beans, drained and rinsed
1 can red kidney beans, drained and rinsed
28 oz can crushed tomatoes
1 chipotle pepper + 2 tbsp adobo sauce
1 cup quinoa cooked
Directions:
1. Spray a medium sized skillet with cooking spray and brown turkey for 5 minutes, add in the onion, garlic, and spices and cook until turkey is done about 15 minutes
2. In a large saucepan combine beans, tomatoes, and pepper, along with 3 ½ cups low sodium vegetable or chicken broth
3. Bring to a boil and add in ground turkey mixture and reduce to a simmer for 30 minutes
4. Add in cooked quinoa and serve with fresh avocado or sour cream
*I added in a half of a baked sweet potato to the top, yummy

Great idea to add quinoa to chili. I'm gonna try that. . . When I got to the end of the recipe and saw it was sweet potato on top, I laughed out loud, because when I saw the picture, I thought “wow! Amanda really went to town with the cheddar cheese!" :-)
