Skinny Cinnamon Roll Pancakes

Nothing says a good Friday morning like pancakes, but what is even better is combining them into a cinnamon roll! These are made with my whole wheat pancake batter and are super yummy! I am very proud of these and was so happy they turned out! An average sized cinnamon roll can contain up to 300-800 calories! I like these because they are made with whole wheat flour, are low in fat, and have good protein, for a completely satisfying breakfast. Enjoy:)
Ingredients:
For the pancakes
2 cups whole wheat pastry flour
4 ½ tsp baking powder
¼ tsp salt
2 tsp cinnamon
2 eggs
2 cups + 2 Tbsp. low fat milk
2 tsp vanilla extract
Cinnamon Swirl
¼ cup canned pumpkin
¼ cup brown sugar
2 tsp ground cinnamon
Frosting
4 oz whipped cream cheese
¼ cup maple syrup
Directions:
1. Mix first 4 ingredients of the pancake batter together in a medium sized mixing bowl
2. Add in wet ingredients and stir to mix
3. Heat a large skillet over medium heat and coat with cooking spray
4. Get a small bowl and combine your cinnamon swirl ingredients, place ingredients into a ziplock bag and cut the tip for easy swirling
5. Place pancakes into skillet using a ¼ cup for each, once the pancake starts to set, using the ziplock bag squeeze about a quarter size of the cinnamon swirl onto the pancakes, using a spoon swirl the filling around, flip and repeat with remaining pancakes
6. Once the pancakes are done heat the cream cheese in the microwave for 30 seconds and stir in maple syrup
7. Lightly drizzle cream cheese mixture onto the pancakes
