Guilty pleasure #322, Wendy’s chicken nuggets. I haven’t been to Wendy’s in years but I got a craving and resisted knowing I could make heartier and healthier ones at home. These are perfect by themselves or you can serve them over a salad. These also make great game day food! Enjoy:)

Ingredients:
1 lb chicken breast (about 2 large, cut into 4 equal sized cutlets, and then cut into bite sized pieces)
2 tsp olive oil
1/3 cup whole wheat breadcrumbs
2 tbsp panko
2 tbsp grated parmesan cheese
Directions:
1. Preheat oven to 425 and spray baking sheet with cooking spray
2. Put the olive oil in one bowl and the breadcrumbs, panko, and cheese into another bowl
3. Place chicken in the olive oil and stir to coat
4. Place a couple nuggets at a time into breadcrumb mixture and coat and place on baking sheet, repeat with remaining chicken
5. Bake nuggets for 8-10 minutes, turn over and bake for an additional 5 minutes
