On Friday we celebrated Dave’s birthday, and I always make him oatmeal raisin cookies for special occasions. I wanted to do something a little more special and thought why not make oatmeal cream pies?! They are actually just healthy oatmeal cookies with a cream filling. I was a little nervous about these, but they turned out great. I was at the store and had to look at the ingredients for the processed oatmeal cream pies, and the first ingredient was corn syrup. These pies also contain 330 calories and 12g of fat. My little pies have only 152 calories and 2g of fat! Enjoy:)
Ingredients:
For the cookies
½ cup whole wheat flour
½ cup all purpose flour
1 tsp baking powder
½ tsp baking soda
½ tsp salt
½ tsp ground cinnamon
1/3 cup baking stevia or ½ cup regular sugar
½ cup unpacked light brown sugar
1 egg
1/3 cup applesauce
½ tsp vanilla extract
2 cups oats
¾ cup raisins
For the cream Filling
½ cup non fat milk
½ a package of sugar-free vanilla instant pudding mix (.5 oz)
1 cup Truwhip (I chose this brand because it’s a natural alternative to cool whip with no added high fructose corn syrup)
Directions:
1. Preheat oven to 350 and line two baking sheets with parchment paper
2. In a medium bowl mix together the flours, baking soda and powder, salt and cinnamon
3. In a large bowl mix the applesauce and sugars until combined, add in the egg and vanilla
4. Stir in the flour and oats and mix until combined, stir in raisins
5. Form cookies into balls (about 1 tbsp each) and place on baking sheet, with the inside of your hand gently press down the cookies
*You should have about 30 cookies to make 15 sandwiches
6. Bake for 10-12 min
7. While cookies are baking add milk to a medium sized bowl and stir in pudding mix, combine until no lumps appear
8. Stir in cool whip and refrigerate
9. Let cookies cool and place a tablespoon of cream mixture between two cookies, serve immediately or keep in the fridge until ready to eat
