Girls Night Pizza Bake

Last night was one of my really good friend’s bachelorette party and I made dinner for Sama and her roommate Amy. I wanted to make something easy but somewhat filling since we were going to go have pole dancing lessons! I was very nervous to go to this, but once we got started I could really see how much work it is! This is not your typical stripper type of dancing. These girls are super talented and in unbelievably good shape. We had so much fun and dinner wasn’t too bad either. Enjoy:)
Ingredients:
2 cups whole wheat penne
1 medium zucchini sliced
1 cup marinara sauce
½ cup reduced fat shredded mozzarella
½ tsp Italian seasoning
8 slices turkey pepperoni
Directions:
1. Preheat oven to 400
2. Cook pasta according to directions
3. In a medium skillet coat with cooking spray and set on low
4. Add 1/8 cup water and chopped zucchini, cover with tight fitting lid and let steam for 2 minutes or until all the water is gone
5.  Spray a medium baking dish with cooking spray and layer pasta, zucchini, sauce, cheese, Italian seasoning, and pepperoni
6. Bake 20 minutes or until cheese is melted
