Whole Wheat Penne with Zucchini and Red Pepper



Often times I close during the week, which means working during dinner time. This dish is so portable and easy to eat on the go. It can be enjoyed hot or cold, I added grilled chicken, but is perfect on its own. Enjoy J
Ingredients:
2 cups whole wheat penne
2 whole zucchinis
1 red bell pepper
4 garlic cloves
1 tbsp olive oil
¼ cup chicken broth or vegetable broth
Red pepper flakes
Pepper
Directions:
1. Cook pasta according to package
2. Heat a large skillet over medium high heat, add olive oil
3. Sauté garlic for 1-2 minutes and add chopped vegetables
4. Continue cooking vegetables and season with red pepper flakes and pepper
5. Add cooked pasta to vegetable mixture and add broth
6. Simmer until liquid is mostly gone
Makes 5 servings
