When Spencer isn’t home at night I get to make whatever I want, and I usually take the opportunity to eat fish, because he hates it! I originally spotted this recipe from Kraft foods, and tweaked it just a little. I used whole wheat bread and panko crumbs, instead of the pre-packaged stuff. It also said to coat the fish in mayo, no thanks, so I coated the fish with olive oil. Homemade fries are so much better than fast food or frozen versions, and take about the same time to make or go get J
Ingredients:
8 oz cod fish fillets
1 large russet potato
3 tsp olive oil
1/8 tsp Chili powder
1/8 tsp Garlic salt
Pepper
1/8 cup whole wheat bread crumbs
1/8 cup panko crumbs
Directions:
1. Preheat oven to 400, Line baking sheet with foil and lightly coat with cooking spray
2. Cut potato into quarters and then into strips and toss with 1 tsp olive oil and coat with seasonings
3. Bake for 15 minutes
4. While fries are baking, coat fish with 2 tsp olive oil
5. Combine bread crumbs onto plate and coat fish
6. Once 15 minutes is up, flip fries and place on outer edges of baking sheet, place fish in middle and bake an additional 15 minutes.
Serves 2
