Grilled Chicken Pita with Vegetables and Raspberry Vinaigrette

This pita will make you want to say Opa! This dish is filled with different flavors and textures. The combination of the veggies, grilled chicken, hummus, and vinaigrette will fulfill any craving. Using lean protein, whole wheat pita bread, vegetables, olive oil, and chickpeas this is a meal in one!
Ingredients:
1 lb. chicken breast
4 large whole wheat pita breads
½ cup roasted garlic or traditional hummus
1 whole zucchini
½ yellow onion
1 green or red bell pepper
1 tbsp olive oil
4 tbsp light raspberry vinaigrette for topping
Directions:
1. Heat skillet over medium high heat and add cooking spray
2. Slice chicken so you have 4 equal pieces
3. Season chicken with fresh ground pepper and cook until done (15-17min)
4. Heat another skillet over medium high heat and add 1 tbsp olive oil
5. Sauté sliced zucchini, onion, bell pepper, and season with pepper
6. Place 2 tbsp hummus on warm pita bread
7. Layer the vegetables and chicken on top
8. Drizzle 1 tbsp vinaigrette on top of mixture
