Orange Peel Oven Baked Tofu

Tofu is one of my favorite protein sources. It can be made so many different ways and used as a replacement in meat dishes. With 14 g of protein per 3 oz this is a great way to get protein in if you are on a vegetarian diet. The trick is to not be afraid of it and practice makes perfect. For this dish you will want to use extra firm tofu. Tofu comes in a variety of textures from soft to extra firm. Soft tofu is usually used in baking. The steps below explain how to get the best flavor and texture for oven baked tofu. Enjoy:)
Ingredients:
1 package extra firm tofu (10 oz)
½ cup orange peel marinade (you can use any flavor, or even just use soy sauce)
Directions:
1. Cut tofu into 9 even slices
2. Lay a double layer of paper towel onto baking sheet and place and arrange tofu into a single layer, top with additional paper towel and place a second baking sheet on top
3. Place a couple heavy objects on top of the baking sheet, I used to big things of flour (This helps drain the water, so the tofu can absorb the sauce)
4. Let tofu sit for 20 min to up to an hour
5. Place ½ cup marinade into a shallow bowl and place tofu slices into the sauce coating each side
6. Let tofu marinate in fridge for 30 min to an hour
7. Preheat oven to 350, place aluminum foil onto baking sheet and coat with cooking spray, arrange tofu onto baking sheet in a single layer, bake 30 min, turning half way through (12-15 min per side)
8. Let cool slightly and serve with rice or vegetables
