Ground Turkey Empanadas

Empanadas are a stuffed bread or pastry that can be baked or fried. They are typically seen in the Latin culture and contain a variety of meat, cheese, vegetables or fruits. I lightened these up by baking them and using ground turkey. Ground turkey is a great alternative to ground beef, when you buy it extra lean. Ground turkey is a great source of protein and includes minerals and vitamins such as vitamin B6. Ground turkey can be replaced in any ground beef recipe you use.
Serving Size-7 Empanadas
Ingredients:
8 oz ground turkey
8 oz diced tomatoes and green chilies
cumin
garlic salt
chili powder
1 ready made pie crust(thawed)
Directions:
Preheat oven to 400
Heat skillet over medium high heat and add cooking spray to coat the bottom
Cook tukey for 15-17 minutes and add spices
Add diced tomatoes and chilies
Lay parchment paper on level surface and unroll pie crust
Use a small-medium biscuit cutter or glass to cut 7 even circles
Re-roll extra dough and repeat-cutting 7 more circles
Comibine the circles to make 7 larger circles

Place 2 Tbsp of meat mixture into the middle of the dough and gently press ends together

Bake for 15 minutes-flipping the empanadas half-way through
Serve with queso, guacamole, or your favorite salsa! Enjoy
