Avocados are a “super fruit” that provide nearly 20 essential nutrients, including fiber, potassium, vitamin E, B-vitamins, and folic acid. They also enable the body to absorb more fat-soluble nutrients such as alpha and beta-carotene and lutein, when eaten with this fruit. This recipe has a lot of different textures and flavors that can be served as a side dish, a main dish with rice, or paired with grilled chicken, for a quick and easy meal.
1 ½ cups black beans
1 ½ cups corn
1 medium tomato
2 tbsp diced jalapeños
1 small avocado
1 lime
Cilantro (for garnish)
Directions:
Drain beans and corn
Slice tomato, jalapeño, and combine to bean mixture
Squeeze whole lime into bean mixture
Refrigerate until ready to use and garnish with chopped avocado and cilantro
Enjoy!

This sounds amazing, with so many of my favorite ingredients. . . I might add cubed jicama for even more texture. I like that it looks like it could be largely made ahead.
