Nothing says the 4th of July like s'mores. I had to work all night and wanted something to have when I got home to celebrate, so I made a frozen version of the classic American treat! You might not think this is a healthy recipe but I used organic graham crackers made with whole wheat, dark chocolate that contained 70 % cocoa, and low fat frozen yogurt. This is a simple recipe that can be made in advance and will please anyone you choose to share with. I only made two sandwiches, but it can easily be doubled to fit the amount of servings you need. Ingredients:
2 full graham cracker sheets
1/4 cup vanilla frozen yogurt
4 pieces dark chocolate
2 jumbo marshmallows
Directions:
Break grahams so you have 4 equal squares
Add 2 tbsp yogurt to one square and repeat with other
Microwave chocolate in 20 second intervals until melted
Add chopped marshmallow and microwave another 10 seconds
Stir mixture and evenly divide mixture to the top of each graham cracker
Place the other graham on top and gently press down
Freeze for 2-3 hours
Makes 2 sandwiches
