Black Bean Brownies with Strawberry Cream Cheese Frosting


I am so excited about these brownies! I have wanted to try these forever, but with so many things to make I am finally getting around to them. These brownies are awesome; they are dense, rich, and super chocolaty. I took them to my parent’s house and of course didn’t tell them they were made with black beans until they finished. My step dad ate two, so they are guy approved! Also the cream cheese frosting is super easy; please don’t buy the gross stuff in a jar. The store-bought frosting contains all sorts of un-natural oils and high fructose corn syrup. The recipe for cream cheese frosting is below and contains only 4 ingredients! If you want a plain cream cheese frosting just omit the strawberries. Enjoy:)
Ingredients:
Brownies
1 box brownie mix (I used Arrowhead Mills Organic Mix, it had chocolate chips mixed in)
*Make sure to get a box mix that will fill a 9x13 dish (17.5 oz -18.25 oz)
1 can black beans
Strawberry Cream Cheese Frosting
1 8oz container 1/3 less fat cream cheese
1 cup powdered sugar
1 tsp pure vanilla extract
1 cup strawberries sliced
Directions:
1. Preheat oven to package directions on brownie mix
2. Open beans and rinse well, put beans back into can and fill with water, place beans and water in a blender and blend until smooth
3. In a mixing bowl combine the brownie mix and beans and mix well
4. Spray a 9x13 pan with cooking spray and pour in mixture
5. Bake according to package directions
6. While brownies are baking combine the cream cheese, powdered sugar, vanilla, and strawberries in a mixing bowl and cream together until smooth, place in fridge until brownies are cool and ready to frost
