This is very similar to overnight oats, but in a cookie form! I love this because just like the overnight oatmeal you can customize any way you would like it. I have been on a protein powder kick lately so I added a half a scoop of it to mine, but it will be great with or without it. If you don’t like banana add in dried fruit, canned pumpkin, or even chocolate chips. Enjoy:)
Ingredients:
½ cup quick oats
1 tbsp peanut butter
½ scoop protein powder (I used designer whey vanilla)
¼ cup almond milk
½ mashed banana or other mix-in of your choice
Directions:
1. Combine all ingredients in a small bowl and mix well until it has formed into a cookie type mixture
2. Transfer onto a small plate and refrigerate overnight

Update!
I made a few different versions of the breakfast cookie including chocolate chip, dried cherry and walnut, and pumpkin spice. I also baked them in the oven for 10 minutes at 350. I needed a portable breakfast to take to school and what better than a cookie!
1/2 cup quick oats
1/2 scoop protein powder
1/4 cup almond milk
1/2 mashed banana
Add Ins....
Pumpkin Spice Breakfast Cookie:
To base add 2 tbsp pumpkin puree and 1/2 tsp pumpkin pie spice
Chocolate Chip Breakfast Cookie:
To base add 1 1/2 tbsp chocolate chips and 1/2 tsp brown sugar
Dried Cherry and Walnut Breakfast Cookie:
To base add 2 tbsp dried cherries and 1 tbsp walnut pieces
Directions:
1. Preheat oven to 350 and spray cooking sheet with nonstick spray
2. Make the base of your cookie by combining oatmeal, protein powder, milk, and mashed banana
3. Mix in your add ins
4. Transfer cookie(s) to baking sheet and form into large circle
5. Bake for 10 minutes until cookie is set
