Black Bean and Sweet Potato Burrito

I have been making black bean and sweet potato burritos for awhile. I love the flavor and the different textures in this burrito. Sweet potatoes are so good for you; they contain a lot of fiber, large amounts of vitamin B6, vitamin A and they are rich in magnesium. This burrito was as big as my face! Enjoy:)
Ingredients:
1 whole wheat tortilla
½ medium sweet potato
½ cup black beans
1 tsp olive oil
½ medium red pepper
¼ of a sweet onion
1/8 tsp chili powder
1/8 tsp cumin
1 garlic clove
Directions:
1. Bake sweet potato; you can bake in the oven at 400 for about 40 min, or in the microwave for about 8-10 min. Peirce potato with a fork before baking or microwaving
2. Drain and rinse beans, measure out a ½ cup
3. Preheat medium sized skillet over medium heat and add olive oil, garlic and onions

4. Cook until onions are soft (4-5min)
5. Add red pepper, beans, chili powder and cumin to olive oil mixture
6. Stir for about 2 minutes
7. Warm Tortilla and spread sweet potato along the center, top with bean mixture and roll up
*Serve with salsa and guacamole if desired
