Chicken Curry Salad

This is a spin on Chicken Waldorf Salad. I came up with this when I ordered a chicken curry salad at Pita Jungle and thought it was so good, later to find out it had over 600 calories in one serving! By combining the right ingredients and using half light mayo and half Greek yogurt this dish came out very good. It is perfect for summer and can be enjoyed over spinach or other greens. I paired it with brown rice for a satisfying meal. Enjoy:)
Ingredients:
8oz poached chicken breast-cut into bite size pieces
2 cups low sodium chicken broth
1 medium gala apple-chopped
1 cup of red seedless grapes
½ cup chopped celery
¼ cup golden raisons
3 tbsp light mayo
3 tbsp Greek Yogurt
1 tsp curry powder
Salt and pepper
Directions:
1. To poach chicken place chicken breast in a medium sized saucepan and cover with chicken broth. Bring to a boil and then let chicken simmer for 5 minutes. Remove chicken from heat and cover with lid, letting the chicken sit for 15-20 minutes.
2. Combine the chicken, apple, grapes, celery, and raisons in a medium sized bowl
3. To make the yogurt sauce, mix the mayo with Greek yogurt and stir in curry powder and salt and pepper
4. Pour yogurt sauce over chicken mixture and mix well, keep in refrigerator until ready to serve
