Applesauce Protein Pancakes

Not all protein pancakes are created equal. I have had to adjust these a couple of times. First they were way too dry, and then too runny. This morning I got it! These are super filling and yummy. Enjoy:)
Ingredients:
1 scoop vanilla flavored protein powder (I used designer whey vanilla)
2 tbsp whole wheat flour
½ tsp baking powder
½ tsp cinnamon
1 egg white
½ tsp vanilla extract
¼ cup almond milk
½ cup applesauce (or other topping of your choice, banana and peanut butter would be good too)
Directions:
1. Spray a medium sized skillet with cooking spray and heat over medium high heat
2. Mix all dry ingredients together, and add wet ingredients, mix to combine
3. Pour batter into skillet and once the pancake bubbles and starts to set flip
                * Do not overcook, or they will be dry!
4. Repeat with remaining batter
5. Serve with ½ cup applesauce or other topping and some pure maple syrup
